I recently won a cast iron Dutch oven at the local casino – well, “won” in that I had to play to earn 75 casino points, which qualified me to RECEIVE the Dutch oven (oh, and I won $400 on one of the slot machines, so there’s that). So I tried to make something with the Dutch oven, and it actually turned out rather – okay.
Follow along with me on this. I made chicken friccasee. Yeah, I know it sounds like the kind of food that only appears in dialogue from exasperated Saturday morning cartoon characters (i.e., “I’m gonna friccasee that gol-darn rabbit!”). But apparently the dish is considered quite a delicacy.
So here we go.
Ingredients:
- Chicken thighs, boneless and skinless, 1/2 pound
- Ground black pepper
- Adobo spice
- Butter, 4 tbsp or 1/2 stick
- Heavy cream, one cup
- 3-4 tsps of all-purpose flower
- Kosher salt (every meal needs Kosher salt)
In the Dutch oven, melt butter on medium-low heat. Sprinkle Kosher salt, adobo and black pepper onto the chicken thighs. Once butter is melted, add heavy cream to the Dutch oven. Keep the flame on medium-low. Submerge chicken thighs in Dutch oven. Lid and cook for 30 minutes on medium-low.
After 30 minutes, remove chicken thighs and place them on a plate. Mix the flour into the pan drippings to create a gravy. Return the chicken thighs to the pan and cook for another 3-5 minutes. Serve.
If you feel the urge, make some instant biscuits – you know, the “bang the tube on the counter” kind – and you can drizzle your gravy onto the biscuits and chicken mixture.
Yeah, this tastes nice. I can deal with this. A little comfort food on a rainy Sunday morning.
