At some point in life, I have to get away from opening a box of pre-made pasta, throwing it in boiling water, and hoping I don’t undercook or overcook it.
Today is not that day.
But if I do have to open a box of pre-made pasta and throw it in boiling water, I can try to make something tasty from it.
So after going online , I found a recipe for fettuccine Alfredo that seems simple enough for anyone to make. So if I can make it, so can you.
Ingredients:
- One box of fettuccine noodles
- Boiling water
- One stick of butter
- One-half rock of Parmigiano Reggiano from the specialty store
- Kosher salt (every meal needs Kosher salt)
Start the water boiling, once it boils, put the fettuccine noodles in.
Put the Kosher salt back in the cupboard.
Let the butter soften.
You’re going to want the real Parmigiano Reggiano from the specialty store. It will come with a rind that usually has the words “PARMAGIANO REGGIANO” stamped on it. Take your grater and rub the cheese over the grater. Get some bandages so that you don’t drip blood from your knuckles onto the cheese from having your fingers too close to the grater.
Once the noodles are to your liking, dump the noodles in a bowl. Add the butter and the cheese. Stir and mix together until the cheese melts with the butter. Plate and serve.
And if you do it right, it’ll come out looking something like this.

Note – you really need to eat this food when it’s fresh. It doesn’t reheat very well in the microwave. Just saying.

Brings to mind the brick-sized slab of lasagna that I recently ordered at “D’Rs” Restaurant in Loudonville – my first and last visit.
Virtually solid ricotta filling; covered in sauce, with maybe one mashed meat ball and a few crumbs of sausage swirled in for effect. That sucker took three days to…move.
